Potato, Apple & Celery Salad with Hung Curd Dressing:

For the Salad: (serves 2)
2 medium sized potatoes, pressure-cook/boil until done. Peel and dice.
½ an Apple, peeled, cored and diced
1 Tbsp of finely chopped Celery leaves, or more according to your taste.

For the Dressing:
6-7 Tbsp of fresh, thick Curd
2 medium sized pods of Garlic
Salt, Pepper & Chilly flakes, as per your taste.

Place the curd in a muslin cloth, knot the cloth up loosely and hang for the excess water to drain out. (I hung the curd for about 40 minutes, and the texture was just perfect. Any more and the curd could get too dry and hard)
In a bowl add the hung curd and, with a fork, mix well until smooth. Add the other ingredients for the dressing and mix again.
To this add the celery, potatoes and apples and mix gently until they are well coated.
Garnish with chopped celery and chilly flakes.
Chill before serving.
